Everytime I make the Double Fisherman’s Bend, after dressing the knot, the free ends rotate around to the same side. All of the photos I see of the knot have the free ends on opposite sides. Does it matter to the effectiveness of the knot?

Firstly, given your “double” and “ends”, I deduce that
you’re talking about the dbl.fish.knot --and would avoid
this nominal issue with “grapevine bend”. 
There are two ways one might orient the two
halves of this “pull-together” knot : tie the
component strangle knots with the same “handedness”
or with opposite. But I’m getting similar results with
these two ways; maybe some images of what you’ve
done would help?
