But, this video shows not how to tie off onto the second ring in a nice secure way and with a low profile.

Any suggestions?

One way to tie it to the second ring is to wrap the ends around the second ring and then tie the wide solomon bar the other way/backwards (two or three steps should do).

Alternatively have a look at the video for the Candy Stripe Bar. At the end he shows a way to tie the ends off.
