The ABOK refers to #683 as the ordinary seaman’s way of making a Matthew Walker by taking a wall knot then following each lead once.
To make a Double Matthew Walker #678 and #680 are shown and on the Internet we have a plethora of videos. The simplest method is never, to my knowledge, mentioned. Simply make a standard wall knot, follow each strand once then repeat and you have a Double Matthew Walker of however many strands that you wish.

I’ll assume that you probably understand that all knots have different ways of tying to arrive at the end result (the completed knot).
Left-handed people tend to tie their knots with opposite chirality compared to right-handed people (many knots are illustrated or shown from the perspective of a right-handed person).
The concept of ‘simple’ is always interesting - whats ‘simple’ to one person may be ‘complex’ to another (cognitive ability and problem solving skills varies greatly across populations!).
Your perspective might be that one particular method is “the simplest”…and from your point of view it probably is.
